The ever‑changing colors of Lake Shikotsu,
shifting with the light and shadow,
captivate at first sight.
Azure skies, the glow of sunset,
the breath of a gentle breeze,
the soft rustle of birds’ wings—
all are quietly mirrored on the lake’s surface.
On calm nights, moonlight spills across the lake,
sometimes pale, sometimes deep,
casting a gentle glow known as “haku” (白),
the “Lake White.”
This tender hue has become the central motif in the design
of Lake Shikotsu Tsuruga Bessou Kohaku no sho.
Here, may you relax and slowly unwind in rhythm with nature’s breath,

In Japanese food culture, “fermentation” and “aging” are essential culinary concepts. Inspired by these, Kohaku no Sho delicately weaves traditional wisdom with modern techniques, awakening the true character of each ingredient through fermentation and aging, and painting a new “KISYOKU” landscape unique to Hokkaido.

Inspired by the image and vision of white moonlight quietly illuminating the lake’s surface, the “Kohaku” (湖白) artworks adorn the water garden and corridor. Using the moonlit “Kohaku” (湖白) tones reflected on Lake Shikotsu as their base, they weave together snow, water mist, stars, birds, and the mountains encircling the lake—art themed on the nature of Lake Shikotsu that gently accents the entire space.
